Comfort Food for #SundaySupper: Red Lentil Soup with Crispy Aromatic Coriander

As the mercury begins to dip and autumn starts to give way to winter, it brings with it the dire need for comfort from the cold. The idea of comfort in a bowl has always taken precedence in the shivery months, but now it has been substituted by comfort in a spoon. To protect ourselves from the biting winds, each bite of manna should help keep us warm. And there is no better way than to curl up under a warm blanket in front of the television or fireplace with a hearty bowl of soup.

Red Lentil Soup with Crispy Aromatic Coriander

Living in a country which experiences equatorial climate all year round, I had not expected to face the cold this winter. However, my surprise trip to San Francisco has led me to face the cold. Even though the temperatures have not taken a plunge, it is still cold for me. The nights become chilly and literally my bones rattle as I step outside. Hence, I am perpetually wearing a sweater or jacket and in dire need of some comfort. Hence this week’s #SundaySupper could not have come at a better time; a recipe to keep myself warm and to share with all those who will need it as winter picks up steam.

Red Lentil Soup with Crispy Aromatic Coriander

Ingredients:

  • 1 cup red lentils
  • 1 cup tomato paste
  • 4 cups chicken stock
  • 1 tsp salt
  • 1 tsp red chili powder
  • Juice of 1 lemon
  • 1/2 tsp nutmeg
  • 1/2 onion, diced
  • 1/2 cup coriander
  • 1 tsp coriander powder

Preparation:

  • Place the red lentils in a stock pot and mix in the tomato paste over low heat for 2-3 minutes till the lentils are covered in the paste
  • Pour in the chicken stock along with the salt, red chili powder, nutmeg and lemon juice
  • Stir well and bring the soup to a boil. As it starts to boil, lower the heat and simmer covered for at least 40 minutes.
  • Keep checking every 10 minutes and stir to prevent the lentils from sticking to the bottom. Add some more stock, if the liquid begins to dry up fast
  • Meanwhile, add the diced onion to a sauce pan and fry in a little oil
  • As it begins to brown, toss in the fresh coriander and coriander powder. Fry till crisp and aromatic. Keep aside to use later
  • Once the lentils have completely broken down and the consistency of the soup is silky, switch off the heat
  • Pour into soup bowls and garnish with the crispy onions and coriander.

    As much as I love lentils I have yet to make lentil soup. This sounds like a good one for my first time. And San Francisco certainly has some unique weather. It does get mighty chilly there with the cold wind blowing in from the bay.
