This week’s #SundaySupper could not have come at a better time. My husband has been wanting to go on a diet to shed off all the holiday weight, but somehow between our travels it has not materialized. This week, however, he made up his mind to stick to a high protein and low-calorie diet. One of the main meals of his diet plan included vegetable soup. Hence, I have been making different variations of the same soup every 2 days during this week. The best part is going grocery shopping for such Vegetable Medley soups. Instead of going to large supermarkets, I opted to go to the famous Malaysian “Wet Market”. These are large outdoor markets, where vendors sell fresh fruits, vegetables, seafood, meat, chicken and spices. The air is filled with music created by the noisy vendors luring you too their stalls. Each counter top is artistically adorned with a variety of colorful fruits and vegetables to choose from. I had never understood why these markets were known as wet markets. The only way I figured it out was as I stepped onto puddles of water while meandering my way through the market. The floors are perpetually wet as the vendors clean the fresh fish and meat right in front of your eyes.
Laden with a bag full of vegetables, I made my way to my kitchen. This recipe is so simple, you have to let all the vegetables create the flavors in the soup. Add all the vegetables and then sit back and relax for 2 hours; the vegetables will create all the magic. It is hearty and healthy bowl of soup that you can have whether you are on a diet or not. One ingredient that I added at the end was some oats. My mother in law had suggested it was a healthy alternative for cornflour to thicken the soup and adds a slight flavor to it.
Ingredients:
- 1 liter water
- 3 carrots
- 3 medium sized yellow onion
- 1 head of broccoli
- 1 cup peas
- 3 leeks
- 1 cup corn
- ½ cup oats
- 3 tomatoes, pureed (optional)
- 3 tsp salt
- 3 tsp freshly cracked black pepper
- 2 tsp smoked paprika (optional)
- ½ cup lemon juice
Preparation:
- Pour 1 liter of water in a large stock-pot
- Add all the chopped vegetables, spices and lemon juice. Stir and bring to a boil
- As the soup begins to bubble, lower the heat to a very slow flame. Pour in the pureed tomatoes and mix well
- Cover and let the soup cook on low heat for an hour and a half
- After the time has elapsed, add the oats and give it a good stir
- Close the lid and cook for another 30 minutes
- Stir again before serving
A delicious waft of flavors hit your face as soon as you open the lid. Adding the tomatoes and smoked paprika add a different dimension to the soup, but it still delicious and hearty without them as well. I simple experimented with the flavors to change the taste of the soup, it helped preventing the flavors from getting clichéd. After my trials, somehow now I prefer the soup with the freshly pureed tomatoes and smoked paprika.
